About Za’atar
Za’atar is more than a spice.
It is part of everyday life in the Eastern Mediterranean - simple, familiar, and deeply rooted in place. For generations, za’atar has been mixed, shared, and eaten at ordinary tables. It was never meant to impress, only to nourish. Bread, olive oil, herbs - food as it was lived, not imagined.
Hyssop and Tradition
Hyssop is one of the oldest herbs mentioned in the Bible,
growing naturally across the hills of the Holy Land.
In the Galilee, it became part of daily cooking - harvested seasonally, dried, and blended with care.
What we call za’atar today carries this tradition forward. Not as a symbol, and not as a ritual, but as food meant to be used every day.
A Simple Blend
At its heart, za’atar is about balance and restraint.
Nothing extra. Nothing hidden.
Our blend is made from carefully selected za’atar, sesame, and olive oil - ingredients chosen for
their flavour, not for effect. This is food that respects its origins.
How Za’atar Is Used
Za’atar has always belonged in everyday kitchens:
- Sprinkled over fresh bread with olive oil
- Added to vegetables, grains, and simple dishes
- Used as a finishing touch, not a centrepiece
It is meant to be shared, not displayed.
Still Part of Everyday Life
Za’atar has survived not because it was sacred, but because it was useful.
Because it tasted good. Because it fit naturally into daily life.
That is how it has always been - and how it remains today.
